Ham, Potatoes, and Green Beans

Yesterday’s organic potatoes Small Change got me in the mood for this quick and easy one-pot dish. You can make it in the crock pot for all-day cooking or on the stove if you want to heat it in a hurry. For my money, though, the extra time in the crock pot is well worth it.

I usually just throw this together without measuring, but for the sake of those who want to start with a recipe, I measured it out when I was making it today.

4-5 organic potatoes, cut in small chunks
1/2 onion, diced
1 16-ounce bag frozen green beans
1/2 pound good ham, cut in small chunks
1/2 cup beef broth (might need more for stove-top cooking)
salt and pepper to taste

Add all to crock pot, stir gently to mix. Cover and cook on low 4 to 6 hours or until potatoes are tender.
