Claudia’s Dump and Stir Chili (crockpot friendly)

It doesn’t get much easier than this, folks! But oh, how good it is!

  • 1# lean ground beef
  • 1 medium onion, diced
  • 1 can (14.5 oz) diced tomatoes with garlic, basil, and oregano (both Del Monte and Hunts make these)
  • 1 can (14.oz) light red kidney beans
  • 1 can (10 oz) Rotel Original tomatoes & green chilis
  • 1 packet taco seasoning (as spicy as you like)
  • V8 juice (no exact measure)

(I don’t care for extra chili powder in my chili, but feel free to add spices to your heart’s content.  After all, it might be Valentine’s Day at your house.)

Brown the ground beef until just brown.  You can brown the onions with the ground beef if you like.

Meanwhile, combine all ingredients except V8 in the crockpot of large soup pot.

Add browned ground beef and onions.

Add V8 to desired consistency.  Stir all together until blended.

For crockpot cooking, cook 4-6 hours on low or 3-4 hours on high.

On the stove, cook until heated through and flavors have a chance to meld.  Do not boil.
